The Best of Both Worlds

Our Roasting Partnership

For Imunika, we sought a roasting partner in the U.S. with not only expertise in specialty coffee roasting but also a deep understanding of our project. With its renowned coffee traditions and vibrant mushroom foraging culture, the Pacific Northwest provided the perfect backdrop for this unique collaboration. After an extensive search, our founder, Jinhu Park, found a like-minded roasters in Seattle, WA.

The Coffee Capital of the U.S.

Home to over 800 coffee shops and countless specialty roasters, coffee runs through Seattle's veins. Owned and operated by a close-knit group of friends from the Washington area, our roasting partners are beloved faces in the local coffee scene with over a decade of success in their business. Our collaboration is built on strong bonds of friendship, a desire for innovation, and an appreciation for the fermentation culture. (The head roaster won our hearts when he casually mentioned, "Btw, I make my own kimchi.")

Small-batch Roasting

Their commitment to quality is clear in every small batch that goes through their customized drum roaster. Small-batch roasting offers numerous benefits for specialty beans, ensuring that each batch receives meticulous attention and care. By roasting in smaller quantities, our expert roasters can precisely control the temperature and duration, allowing the unique characteristics of each bean to shine. This method enhances the flavors and aromas, bringing out the nuanced notes that make specialty coffee so distinctive.

Designing the Roasting Profiles for Functional Beans

Roast with Intention

In the specialty coffee industry, the trend is to focus on niche flavor profiles that cater to a specific group of coffee enthusiasts. Many specialty roasters pride themselves on creating unique and distinct coffees that highlight particular flavor notes, often at the expense of broader appeal. However, as a functional specialty coffee, Imunika must cater to all range of coffee lovers who are looking for their ideal first cup. In short, flavor-wise, we need to deliver a universally savory experience.

Two Medium Roastings

To achieve this goal, together with our roasting partner, we carefully crafted two medium-based profiles: Medium-Light and Medium-Dark. This strategic approach allows us to optimize the balance between flavor depth and drinkability. By moving away from the extremes of light and dark roasts, we leverage the versatility of medium roasting to highlight the fermented beans’ natural qualities while maintaining a smooth, satisfying experience. This intentional fine-tuning within the medium range ensures our coffee appeals to a broad audience, offering complexity without alienating any group of coffee lovers.

Never Judge The Beans By Its Cover

Don't be surprised if our coffee looks darker than it tastes — that's a sign of our fermentation process. The rich color comes from our microbial fermentation, but the flavor is smooth, surprisingly non-bitter. In fact, we encourage you to bite into our beans. They will crumble and melt in your mouth like cookies, a delightful contrast to the usual hard and bitter coffee beans. This is just one way our fermentation process sets our coffee apart.

Scored 87.6% in Blind Tasting by CCA

To objectively verify the flavor quality, we conducted a blind tasting session with 6 Flavor Masters trained by the Culinary Institute of America (CIA) program. These experts tasted Imunika without any prior knowledge of its unique processing—ensuring an unbiased evaluation based solely on taste. And the result? A score of 87.6% that places Imunika among the finest in specialty coffee

Imunika offers a smooth, well-rounded profile with rich notes of chocolate and caramel. But what truly sets us apart is our distinctive low acidity and high sweetness. While most high-grade specialty coffees emphasize vivid acidity unique characteristics, Imunika is specifically crafted for a gentler morning experience that’s easy on the stomach—ideal for those who seek a refined coffee that’s as comfortable as it is flavorful.

With scores above 80% recognized as standard specialty, our 87.6% proves that Imunika is truly the world's only functional coffee that can stand alongside the finest—purely on flavor.
